Barbara Saltarini, the goat farmer based in Santuario di Rezzo, began her cheese making business with fifteen goats in a small laboratory in the presbytery of the ancient sanctuary. Now, she has two hundred goats and a new dairy where she produces an excellent raw-milk cheese.
