Fresh pasta making goes right back to ancient history. Tagliatelle, tagliolini and ravioli were rolled and cut from dough many, many years ago.Piera Gazzelli’s Laboratorio continues this tradition with its artisanal production of pasta, cakes and typical products from the province of Imperia, from Panissa (chickpea polenta) to Torta Verde (courgette and herb pie).
