Tasting the many baked goods from Ponente Ligure is a unique pleasure: fragrances, lightness and bygone flavours mark the famous bread from Triora, Aurigo and Molini di Triora, whose goodness is a mystery. No one knows if it is the air, the water or the baker’s skill… probably all three, combined with other precious secrets. The only way to solve the mystery is to taste these rustic breads – crunchy on the outside and soft on the inside.

We can find the very same goodness in our local cakes – stroscia di Pietrabruna (a crumbly cake made with olive oil), michetta di Dolceacqua (a sort of brioche), cubaita di Isolabona (honey and hazelnut wafer), Pontedassio biscuits and canestrelli di Taggia (round twists of dough) – and in the savoury pies, all filled with local vegetables.

But that’s not all: Ligurian cuisine also means fresh pasta, be it plain or stuffed, chickpea Farinata and Panissa and pizza all’Andrea…
